buying a new processor, motherboard and memory, any remarks on the following: ?
Intel Core i7-2600K 3,4GHz / 8MB / Socket 1155 (Boxed) ASUS P8P67 LE B3 - ATX / Intel P67 / DDR3 / 2xPCI-E / SATA 3.0 / USB 3.0 / Firewire Corsair XMS3 Vengeance 8GB DDR3 PC3-15000 1866MHz (2X4GB) (CL9) (CMZ8GX3M2A1866C9)
I'm guessing that "LE" stands for light edition or something like it as it is about 20 euro cheaper than the one named just "ASUS P8P67 B3", am I making a mistake in buying that one? Am I limiting my OC capabilities or something like that?

I have the standard version simply called P8P67 and I would recommend against it. It does not play well with high performance RAM and just is not a good buy. Go for a z68 instead, friend got an ASRock Z68 Extreme3 Gen3 and it seems miles better. Just around 100€ from what I can see as well.

I would also go for 4 2GB sticks of RAM over 2 4GB ones. With the current price of memory though, investing in 4x4 is actually not at all a bad idea. DDR3 should last you through at least 2 more generations of processors so even though 16GB might seem like massive overkill, you could just skip paging out shit and get a little bonus performance out of it in those rare cases or in the future when.
Nowadays you can get 16 GB decent ram for some 100 euro. Crazy cheap. Has something to do with the Thailand flooding from what I hear. Same reason disk drives are crazy expensive :/
