Well, it's just that you really don't need more than 8GB yet, and if at some point you do, then you should have the opportunity to upgrade, hence the 2x4GB.

Go for cheap 1600 RAM.
Fill up all slots imho. You dont have to, but it's better(!).
Also, go for a z68 MB. Don't go for the P8P67 boards. None of em are worth it. I recommended the AsRock z68 Extreme3 Gen3 or whatever, and I stand by it. Value for money.
SLI is a very nice thought, but my experience with multi-gpu (albeit CFX), is that it is s h i t. Hardly ever works properly by the release of new games. Works horribly for anything console-ported. And so on. I just got myself a 6970 over one of my 5850s. That in mind CFX 5850x2 should be about the same performance as a single 6970 (which is what I will now be using).
However, a 560Ti is not a bad gpu by any means. And having it spare when u later upgrade to the best bang for the buck gpu whenever u feel u need to is not too bad. It makes for an excellent TV-out card for example.

From my experience its not. The performance is very minimal and mostly noticable in benchmarks only. About the pro version of the board, i dont know. I usually dont buy those extra expensive ones since i dont need "better" sound or any other goodie.

@ NOUI the LE version supports only crossfire, @ MIBA the Z68 has an intel integrated gpu, at least the version at that web shop ill probably buy from, and its not rly cheaper then the one i posted.
also if i dont plan on goin SLI then i can save some moneyz on powersuply, MoBO and ram caus the cheap ones work on 1333 Mhz ram tops, with H61 Chipsets
